One-pan vegan chocolate brownie cake – absolutely delicious and non-vegan approved 🙂 Give it a try if you’re a hardcore vegan, wanting to try something new, or just looking for an easy recipe!
- 1¼ cup any type of flour
- ½ cup any type of granulated sugar
- ⅓ cup unsweetened cacao or cocoa powder
- 1 tsp baking soda/powder
- 1 tsp cinnamon
- 1 cup warm water
- ⅓ cup coconut oil
- 1 tsp apple cider vinegar
- ¼ cup any type of granulated sugar
- 4 tbsp coconut oil
- 2 tbsp coconut milk
- 2 tbsp unsweetened cacao or cocoa powder
Directions~ Set oven to 350F/180C. In a 11×7 baking pan, mix dry ingredients completely (flour, sugar, cacao powder, baking soda, cinnamon). After, add the water, coconut oil, and apple cider vinegar and mix completely. Use a spatula to scrape sides and flatten your batter. Bake for 25 minutes and use a knife to check and see if your cake is completely cooked. If the knife comes out clean, your cake is ready, if batter sticks to your knife, keep your brownie cake baking for an additional 10 minutes.
Once your cake is done, set aside to cool while you make the choco topping! Mix sugar, coconut oil, coconut milk and cacao powder in a small saucepan, continuously stirring. Stir for about 2 minutes without stopping. Once your cake has completely cooled, pour and spread your topping! Add anything to the top (I used oats and chia seeds) Use sprinkles, chocolate flakes, granola, banana, strawberries, coconut flakes, anything!
